- 1 lb ground beef
- 1 packet taco seasoning (or homemade)
- ½ cup water
- 8 large flour tortillas (burrito size)
- 2 cups shredded Mexican blend cheese
- 1 cup cooked seasoned rice (Spanish rice or cilantro lime rice works)
- ½ cup nacho cheese sauce or warm queso
- ½ cup sour cream
- ¼ cup creamy chipotle sauce (bottled taco sauce or chipotle mayo works)
Instructions
- Brown the ground beef in a skillet over medium heat, breaking it up as it cooks. Drain off any excess grease, then stir in the taco seasoning and water and let it simmer until the mixture thickens.
- Warm one tortilla in a skillet over medium heat and sprinkle a generous handful of shredded cheese over the top. Place a second tortilla on top and cook until the cheese melts and holds the two together like a quesadilla.
- Transfer the cheesy tortilla to a flat surface and spoon a line of seasoned rice, taco meat, nacho cheese sauce, sour cream, and chipotle sauce down the center.
- Fold in the sides and roll it up tightly to form a burrito.
- Place the burrito seam-side down in a dry skillet and cook for 1 to 2 minutes, just until it’s lightly toasted and sealed.
- Slice in half and serve warm.
