Description

Fat Free Greek Yogurt Cinnamon Rolls are a delicious and easy sheet pan recipe. Perfect for breakfast or a sweet treat.


Ingredients

  • 3 1/2 cups bread flour (420 g), sifted and leveled
  • 2 tsp instant yeast
  • 2 Tbsp sugar
  • 1 tsp salt
  • 1 1/3 cup fat free greek yogurt (333 g), plain or unsweetened, drained
  • 1/2 cup plus 2 Tbsp water or milk of choice
  • 3 Tbsp brown sugar or granulated monk fruit sweetener
  • 1 Tbsp cinnamon powder
  • 1 cup powdered sugar or powdered monk fruit sweetener
  • 2 Tbsp milk of choice

Instructions

  1. Mix all the dry ingredients (bread flour, instant yeast, sugar, salt) in the bowl of the stand mixer.
  2. Add the greek yogurt.
  3. Start to knead the dough at a low setting (speed 2), and add 1/2 cup of the water. Add more water if needed.
  4. Continue to knead for about 8 to 10 minutes until the dough pulls away from the bowl.
  5. Remove the finished dough from the mixer bowl and place in a lightly greased bowl.
  6. Let rise until doubled, about 60-90 minutes.
  7. While the dough rises, prepare the filling by mixing the filling ingredients.
  8. Punch down the dough, remove from the bowl, and flatten into a rectangle, about 18 x 10 inches in size.
  9. Wet the surface of the dough with water or almond milk.
  10. Spread the filling mixture over the dough.
  11. Shape the dough into a roll from the long end, pinching the seams to seal.
  12. Cut the rolled up dough into 12 equal sized individual rolls.
  13. Line a 9″ x 12″ rectangular pan with parchment paper.
  14. Place the rolls on the baking pan, swirl side up, about half inches apart.
  15. Let the rolls rise again for about 30 minutes until puffy. Preheat the oven to 350F / 180C.
  16. Bake the rolls for 15-20 minutes until golden brown.
  17. Prepare the glaze by mixing powdered sugar and milk.
  18. Once cooled enough to handle, glaze the rolls.
  19. Enjoy!
