Description
Fat Free Greek Yogurt Cinnamon Rolls are a delicious and easy sheet pan recipe. Perfect for breakfast or a sweet treat.

- 3 1/2 cups bread flour (420 g), sifted and leveled
- 2 tsp instant yeast
- 2 Tbsp sugar
- 1 tsp salt
- 1 1/3 cup fat free greek yogurt (333 g), plain or unsweetened, drained
- 1/2 cup plus 2 Tbsp water or milk of choice
- 3 Tbsp brown sugar or granulated monk fruit sweetener
- 1 Tbsp cinnamon powder
- 1 cup powdered sugar or powdered monk fruit sweetener
- 2 Tbsp milk of choice
Instructions
- Mix all the dry ingredients (bread flour, instant yeast, sugar, salt) in the bowl of the stand mixer.
- Add the greek yogurt.
- Start to knead the dough at a low setting (speed 2), and add 1/2 cup of the water. Add more water if needed.
- Continue to knead for about 8 to 10 minutes until the dough pulls away from the bowl.
- Remove the finished dough from the mixer bowl and place in a lightly greased bowl.
- Let rise until doubled, about 60-90 minutes.
- While the dough rises, prepare the filling by mixing the filling ingredients.
- Punch down the dough, remove from the bowl, and flatten into a rectangle, about 18 x 10 inches in size.
- Wet the surface of the dough with water or almond milk.
- Spread the filling mixture over the dough.
- Shape the dough into a roll from the long end, pinching the seams to seal.
- Cut the rolled up dough into 12 equal sized individual rolls.
- Line a 9″ x 12″ rectangular pan with parchment paper.
- Place the rolls on the baking pan, swirl side up, about half inches apart.
- Let the rolls rise again for about 30 minutes until puffy. Preheat the oven to 350F / 180C.
- Bake the rolls for 15-20 minutes until golden brown.
- Prepare the glaze by mixing powdered sugar and milk.
- Once cooled enough to handle, glaze the rolls.
