Description

Fat Free Greek Yogurt Cinnamon Rolls are a delightful, easy-to-make treat perfect for any occasion.


Ingredients

Scale
  • 3 1/2 cups bread flour (420 g), sifted and leveled
  • 2 tsp instant yeast
  • 2 Tbsp sugar
  • 1 tsp salt
  • 1 1/3 cup fat free greek yogurt (333 g), plain or unsweetened, drained
  • 1/2 cup plus 2 Tbsp water or milk of choice
  • 3 Tbsp brown sugar or granulated monk fruit sweetener
  • 1 Tbsp cinnamon powder
  • 1 cup powdered sugar or powdered monk fruit sweetener
  • 2 Tbsp milk of choice

Instructions

  1. Mix all dry ingredients in the bowl of the stand mixer.
  2. Add the greek yogurt.
  3. Knead the dough at a low setting and add 1/2 cup of the water. Add more water if needed.
  4. Knead for 8 to 10 minutes until the dough forms a slightly bumpy, stretchy ball.
  5. Remove the dough from the mixer and place in a lightly greased bowl.
  6. Let rise until doubled, about 60-90 minutes.
  7. Prepare the filling by mixing the filling ingredients.
  8. Punch down the dough and place on a floured surface. Flatten into a rectangle, about 18 x 10 inches.
  9. Wet the surface of the dough with water or almond milk.
  10. Spread the filling mixture over the dough.
  11. Roll the dough from the long end and pinch the seams to seal.
  12. Cut the rolled dough into 12 equal-sized rolls.
  13. Line a 9″ x 12″ pan with parchment paper.
  14. Place the rolls on the pan, swirl side up, about half an inch apart.
  15. Let rise for about 30 minutes until puffy. Preheat the oven to 350F / 180C.
  16. Bake for 15-20 minutes until golden brown.
  17. Prepare the glaze by mixing powdered sugar and milk.
  18. Once cooled, glaze the rolls.
  19. Enjoy!
