A creamy and comforting chicken parmesan soup made in a slow cooker.
Ingredients

- 2 boneless, skinless chicken breasts or thighs
- 1 can crushed tomatoes
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 2 tsp Italian seasoning blend
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 8 oz cream cheese, softened
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 cup small pasta shapes (ditalini, acini de pepe, or orzo)
- 1/4 cup fresh basil leaves, roughly chopped or torn
Instructions
- Prepare Your Ingredients: Dice your onion, mince your garlic, and measure out all spices.
- Combine in the Crock Pot: Place chicken at the bottom of the slow cooker. Add crushed tomatoes, diced tomatoes, chicken broth, onion, and garlic. Sprinkle in seasonings and stir gently.
- Slow Cook to Perfection: Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is tender.
- Shred the Chicken: Remove chicken, shred it, and return to the soup.
- Introduce the Creaminess: Add cream cheese, heavy cream, and Parmesan cheese. Stir until melted and smooth.
- Cook the Pasta: Add pasta to the slow cooker during the last 30-60 minutes on HIGH, or cook separately and add to bowls.
- Taste and Adjust: Adjust seasonings to your taste.
- Serve and Garnish: Ladle soup into bowls, garnish with basil and Parmesan, and serve hot.

- For best texture, cook pasta separately if storing leftovers.
