- 6 large eggs
- 2 cups fresh spinach, chopped
- 1 cup grated cheddar cheese
- 1/2 cup whole milk
- 1 small onion, diced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking dish by spraying it with nonstick cooking spray.
- In a skillet over medium heat, add olive oil and sauté the diced onion until translucent (about 5 minutes). Add chopped spinach to the skillet and cook until wilted (about 2-3 minutes).
- In a large bowl, whisk together the eggs, whole milk, salt, and black pepper until frothy. Gently fold in the sautéed spinach and onions along with half of the grated cheddar cheese.
- Pour the mixture into the prepared baking dish and top with the remaining cheddar cheese. Bake in the preheated oven for 30-35 minutes or until set and golden brown on top.
- Allow to cool slightly before slicing into squares. Serve hot and enjoy!
