  • 6 large eggs
  • 2 cups fresh spinach, chopped
  • 1 cup grated cheddar cheese
  • 1/2 cup whole milk
  • 1 small onion, diced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish by spraying it with nonstick cooking spray.
  2. In a skillet over medium heat, add olive oil and sauté the diced onion until translucent (about 5 minutes). Add chopped spinach to the skillet and cook until wilted (about 2-3 minutes).
  3. In a large bowl, whisk together the eggs, whole milk, salt, and black pepper until frothy. Gently fold in the sautéed spinach and onions along with half of the grated cheddar cheese.
  4. Pour the mixture into the prepared baking dish and top with the remaining cheddar cheese. Bake in the preheated oven for 30-35 minutes or until set and golden brown on top.
  5. Allow to cool slightly before slicing into squares. Serve hot and enjoy!
