- 2 cups (350 g) queso costeño (or feta cheese or a mix of feta cheese and queso fresco)
- 1 cup (120 g) cornstarch
- 1/2 cup (140 g) cassava starch/flour (aka yuca starch/flour)
- 4 tbsp (50 g) white granulated sugar
- 1 tsp salt
- 1/4 tsp baking powder
- 1 egg
- 1 tbsp (15 g) unsalted butter (room temperature)
- 1 tbsp (15 g) milk (optional, if and as needed)
- Vegetable oil (for frying)
Instructions
- Grate the cheese finely to ensure it blends well into the dough.
- In a large bowl, combine the grated cheese, cornstarch, cassava flour, sugar, baking powder, salt, eggs, and butter. Mix until a dough begins to form.
- Gradually add milk, one tablespoon at a time, and knead until the dough is smooth and hydrated but not sticky.
- Divide the dough into small balls, about the size of a golf ball.
- In a deep pot, heat vegetable oil to a temperature between 320°F (160°C) and 340°F (180°C) using a kitchen thermometer.
- Fry the bunuelos in batches of 3-4, ensuring the oil temperature stays steady. Fry for about 5 minutes, or until golden and crispy. Flip them if necessary for even cooking.
- Once fried, remove the bunuelos from the oil and place them on paper towels to drain excess oil.
- Serve immediately, optionally pairing with Colombian natilla for an authentic treat.
