Description

Colombian Bunuelos are soft, spongy, and cheesy dough treats deep-fried until golden and crispy on the outside, with a tender, fluffy inside. These delicious bites are perfect for snacking all year round, especially as a holiday treat paired with Colombian natilla.

  • 2 cups (350 g) queso costeño (or feta cheese or a mix of feta cheese and queso fresco)
  • 1 cup (120 g) cornstarch
  • 1/2 cup (140 g) cassava starch/flour (aka yuca starch/flour)
  • 4 tbsp (50 g) white granulated sugar
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 1 egg
  • 1 tbsp (15 g) unsalted butter (room temperature)
  • 1 tbsp (15 g) milk (optional, if and as needed)
  • Vegetable oil (for frying)

Instructions

  1. Grate the cheese finely to ensure it blends well into the dough.
  2. In a large bowl, combine the grated cheese, cornstarch, cassava flour, sugar, baking powder, salt, eggs, and butter. Mix until a dough begins to form.
  3. Gradually add milk, one tablespoon at a time, and knead until the dough is smooth and hydrated but not sticky.
  4. Divide the dough into small balls, about the size of a golf ball.
  5. In a deep pot, heat vegetable oil to a temperature between 320°F (160°C) and 340°F (180°C) using a kitchen thermometer.
  6. Fry the bunuelos in batches of 3-4, ensuring the oil temperature stays steady. Fry for about 5 minutes, or until golden and crispy. Flip them if necessary for even cooking.
  7. Once fried, remove the bunuelos from the oil and place them on paper towels to drain excess oil.
  8. Serve immediately, optionally pairing with Colombian natilla for an authentic treat.
