- 1/4 cup Light brown sugar
- 2 teaspoon Sea salt
- 1 teaspoon Onion powder
- 1 teaspoon Garlic powder
- 1 teaspoon Cracked black pepper
- 3 pounds Boneless beef chuck or boneless beef ribs
- 2 tablespoons Olive oil or vegetable oil
- 2 tablespoons Unsalted butter
- 2 clove Garlic, finely diced
- 1 cup Dark-roast cold brew coffee
- 1 cup Beef broth
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 tablespoon Fresh thyme or parsley (optional)
Instructions
- Mix the Rub: In a bowl, combine coarse dark-roast coffee grounds, brown sugar, sea salt, onion powder, garlic powder, and cracked black pepper.
- Prep the Beef: Pat the boneless beef chuck or ribs dry and generously coat them with the coffee rub. Cover and refrigerate for at least 6 hours.
- Sear the Beef: Preheat your oven to 375°F. In a skillet, heat up the olive oil over medium-high heat. Sear the beef on all sides until golden-brown.
- Braise with Flavor: Add butter, finely diced garlic, and cold brew coffee to the skillet. Cover tightly with foil and braise in the oven for 30 minutes.
- Continue Braising: Lower oven temperature to 350°F. Baste the beef with pan juices, cover again, and braise for an additional 30 minutes.
- Let it Rest: Once tender, remove from the oven and let it rest for 10 minutes.
- Sauté the Mushrooms: Melt butter in a pan over medium heat. Sauté sliced mushrooms until golden, then stir in minced garlic.
- Make the Gravy: Gradually whisk in cold brew coffee and beef broth, adding flour for thickness. Season to taste.
- Serve and Enjoy: Slice or shred the beef and serve topped with mushroom gravy.
