- 2 teaspoons Instant coffee
- 2 tablespoons Milk
- 2 cups Cake flour
- 1/2 cup Cocoa powder
- 1/4 cup Corn starch
- 1/2 cup Unsalted butter
- 1 large Egg yolk
- 1/2 cup Powdered sugar
- Cooking spray or parchment paper
Instructions
- Microwave 2 teaspoons of milk in a microwave-safe bowl for 20 seconds. Mix the hot milk with the instant coffee, whisking until all the coffee granules are fully dissolved.
- Sift together the cake flour, corn starch, and cocoa powder into a large bowl.
- Whisk the softened butter until creamy. Add the powdered sugar and whisk until combined. Then, add the egg yolk and mix until pale and creamy.
- Combine the dissolved coffee into the butter-egg mixture. Stir well until evenly distributed.
- Sift the dry ingredients into the wet mixture. Gently mix until the dough resembles coarse crumbs.
- Roll the dough into a log. Cut the log into ½ inch cubes, then roll each cube into an oval shape.
- Press the center of each shaped dough to create an indentation. Arrange on a baking sheet and chill for about an hour.
- Preheat the oven to 325°F.
- Bake the chilled dough for 12-14 minutes until firm and slightly cracked on the surface.
- Cool the cookies for 10 minutes on the baking sheet before transferring to a wire rack.
Notes
- Store cookies in an airtight container.
- Substitute instant coffee with espresso powder for a stronger flavor.
