Instructions
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add powdered sugar and vanilla extract, then beat again until light and fluffy.
- Stir in graham cracker crumbs and melted butter until well combined.
- Cover the bowl and refrigerate the mixture for at least 1 hour.
- Once chilled, scoop out tablespoon-sized portions and roll into balls using your hands.
- Roll each ball in shredded coconut until fully coated.
- Place the finished bites on a lined tray and refrigerate for at least 30 minutes.
- Serve chilled and enjoy.
