- 1 pound boneless, skinless chicken thighs or breasts, diced
- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 3 cups chicken broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon turmeric
- 1/2 teaspoon cumin
- Fresh cilantro, for garnish
- Sliced green onions
- Lime wedges
Instructions
- Heat olive oil in a large pot over medium heat. Cook onion until soft. Add garlic and ginger and sauté 30 seconds.
- Add diced chicken, salt, pepper, and optional spices. Cook until lightly browned.
- Stir in jasmine rice, coconut milk, and chicken broth.
- Bring to a gentle boil, reduce heat to low, cover, and simmer 18–20 minutes until rice is tender and slightly brothy.
- Remove from heat and let sit covered for 5 minutes.
- Fluff gently, garnish with cilantro, green onions, and lime juice if desired.
