  • 1 pound boneless, skinless chicken thighs or breasts, diced
  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 3 cups chicken broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • Fresh cilantro, for garnish
  • Sliced green onions
  • Lime wedges

Instructions

  1. Heat olive oil in a large pot over medium heat. Cook onion until soft. Add garlic and ginger and sauté 30 seconds.
  2. Add diced chicken, salt, pepper, and optional spices. Cook until lightly browned.
  3. Stir in jasmine rice, coconut milk, and chicken broth.
  4. Bring to a gentle boil, reduce heat to low, cover, and simmer 18–20 minutes until rice is tender and slightly brothy.
  5. Remove from heat and let sit covered for 5 minutes.
  6. Fluff gently, garnish with cilantro, green onions, and lime juice if desired.
