- 2 cups shredded coconut
- 1 cup almond flour
- 1/4 cup maple syrup
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/2 cup dark chocolate chips (optional, for coating)
Instructions
- In a medium bowl, combine shredded coconut, almond flour, maple syrup, coconut oil, vanilla extract, and a pinch of salt. Stir until the mixture is evenly moist and sticks together.
- Refrigerate the mixture for 20 to 30 minutes until slightly firm.
- Scoop and roll the dough into bite-sized balls using your hands. Optionally, press a whole almond into the center of each.
- Melt the dark chocolate chips and dip each truffle to coat. Set on parchment paper.
- Chill the truffles for 15 minutes or until the coating is set. Serve chilled.
Notes
- Store in an airtight container in the fridge.
- Can be made without chocolate coating for a lower-calorie option.
