Ingredients

  • 8-ounce block of cheddar cheese, cubed
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 cup cooked and chopped beef bacon
  • 1 cup cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup shredded lettuce

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a bowl, combine mayonnaise, mustard, lemon juice, salt, and pepper. Whisk until smooth.
  3. In a large bowl, combine pasta, beef bacon, chicken, tomatoes, cucumber, onion, and lettuce. Pour dressing over and toss to coat.
