Instructions

- In a large mixing bowl, beat the butter and powdered sugar together using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.
- Add the vanilla extract and beat until combined.

- The dough should come together easily. If it feels too sticky, you can add a little more flour, a tablespoon at a time.
- Using a spoon or cookie scoop, portion the dough into small, 1-inch balls.
- Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Gently roll the dough balls between your hands to ensure they are smooth and uniform in size.
- Bake the cookies in the preheated oven for 12-14 minutes, or until they are set and lightly golden on the bottom.
- Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, prepare the cinnamon sugar coating by combining the granulated sugar and cinnamon in a small bowl.
- Once the cookies have cooled slightly, roll them in the cinnamon sugar mixture, ensuring they are fully coated. The warmth from the cookies will help the cinnamon sugar stick.
- Allow the cookies to cool completely before serving or storing.
