- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter (softened)
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup fresh strawberries (chopped)
- 1 cup heavy cream
- 1/2 cup sugar
- 1/2 tsp vanilla extract (for ice cream)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and brown sugar together until light and fluffy, then add egg and vanilla extract.
- In a separate bowl, mix oats, flour, cinnamon, baking soda, and salt, then combine with wet ingredients.
- Scoop dough onto baking sheet and bake for 10-12 minutes until edges are set. Let cookies cool completely.
- Macerate strawberries with sugar for 15 minutes, then blend into a smooth puree.
- Whip heavy cream until soft peaks form, then fold in strawberry puree and vanilla extract.
- Freeze mixture for 4-6 hours or until firm.
- Scoop strawberry ice cream onto one cookie and top with another to form a sandwich.
- Freeze assembled sandwiches for at least 2 hours before serving.
