- 4 large egg whites, at room temperature
- 1 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 tablespoons pure maple syrup
Instructions
- Preheat your oven to 200°F (95°C). Line two baking sheets with parchment paper.
- In a large mixing bowl, beat the egg whites on medium speed until frothy. Add the cream of tartar and continue to beat until soft peaks form.
- Slowly add the granulated sugar, about 1 tablespoon at a time, while beating on high speed until the mixture is glossy and stiff peaks form.
- Gently fold in the vanilla extract, ground cinnamon, and maple syrup.
- Transfer the meringue mixture to a piping bag fitted with a star or round tip. Pipe dollops or swirls onto the prepared baking sheets, spacing them about 1 inch apart.
- Bake for 1 hour, or until dry to the touch and easily lift off the parchment paper.
- Turn off the oven and leave the meringues inside to cool completely, about 1 hour.
- Once cooled, remove from parchment paper and serve.
