Description

Cinnamon Knots with Coffee Icing are sweet, fluffy pastries twisted into knots and topped with a rich coffee icing.

Ingredients

Scale
  • For the Cinnamon Knots
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter (melted)
  • 3/4 cup milk
  • 1 large egg (lightly beaten)
  • 1 tablespoon vanilla extract
  • For the Cinnamon Filling
  • 1/4 cup unsalted butter (softened)
  • 1/2 cup brown sugar (packed)
  • 1 tablespoon ground cinnamon
  • For the Coffee Icing
  • 1 cup powdered sugar
  • 2 tablespoons brewed coffee (cooled)
  • 1 tablespoon milk (adjust for consistency)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, salt, baking powder, and ground cinnamon.
  3. In another bowl, combine the melted butter, milk, beaten egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; the dough should be slightly sticky.
  5. In a small bowl, mix together the softened butter, brown sugar, and ground cinnamon until well combined.
  6. On a floured surface, roll the dough into a rectangle about 1/4 inch thick.
  7. Evenly spread the cinnamon filling over the dough rectangle.
  8. Cut the dough into strips (about 1 inch wide). Take each strip and twist it into a knot, tucking the ends underneath. Place the knots on the prepared baking sheet.
  9. Bake in the preheated oven for 15-20 minutes, or until golden brown and cooked through. Remove from the oven and let cool slightly.
  10. In a small bowl, whisk together the powdered sugar, brewed coffee, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if necessary.
  11. Once the knots have cooled slightly, drizzle the coffee icing over the top.
  12. Serve warm or at room temperature and enjoy your delicious Cinnamon Knots with Coffee Icing!
