Description

These Churro Rice Krispie Treats are soft, gooey, and coated in a sweet cinnamon-sugar blend for that perfect churro-inspired bite.


Ingredients

  • 6 cups Rice Krispies cereal
  • 10 oz mini marshmallows (about 4 cups), plus 1 extra cup reserved
  • ½ cup (1 stick) unsalted butter
  • 1 tsp vanilla extract
  • 1½ tsp ground cinnamon
  • ⅓ cup brown sugar
  • ⅓ cup granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)
  • Nonstick spray or butter (for greasing the pan)

Instructions

  1. BROWN THE BUTTER: In a large pot over medium heat, melt the butter while stirring continuously until it turns golden brown, about 5–7 minutes.
  2. ADD MARSHMALLOWS & SPICES: Reduce the heat to low. Add 10 oz (4 cups) of mini marshmallows, cinnamon, brown sugar, and vanilla extract. Stir until melted and smooth.
  3. STIR IN CEREAL: Remove the pot from heat. Add the Rice Krispies cereal and stir to coat all the cereal with the marshmallow mixture.
  4. ADD EXTRA MARSHMALLOWS: Fold in the remaining 1 cup of mini marshmallows to add soft pockets throughout the bars.
  5. PRESS INTO PAN: Lightly grease a 9×13-inch baking pan. Use a buttered spatula to press the mixture into the pan evenly.
  6. ADD THE CHURRO TOPPING: In a small bowl, combine ⅓ cup granulated sugar with 1 tsp cinnamon. Sprinkle over the bars while they’re warm.
  7. COOL & CUT: Allow the bars to cool completely, about 30–45 minutes. Cut into 16 squares and serve.
