- 4 medium beets, peeled and chopped into bite-sized pieces
- 3 medium turnips, peeled and chopped into bite-sized pieces
- 3 tbsp olive oil
- 2 tsp fresh rosemary, chopped
- Salt and pepper to taste
- 3 tbsp balsamic vinegar
- 2 tbsp raw honey
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Peel and chop the beets and turnips into bite-sized pieces. Place them in a mixing bowl.
- Drizzle olive oil over the vegetables. Sprinkle with salt, pepper, and fresh rosemary. Toss until evenly coated.
- Spread the seasoned vegetables evenly on the prepared baking sheet. Roast for about 30-35 minutes or until tender and caramelized.
- While roasting, combine balsamic vinegar and honey in a small saucepan over medium heat. Stir until well combined and simmer for about five minutes until slightly thickened.
- Once roasted, remove the vegetables from the oven and drizzle with glaze. Toss gently to combine before serving on a festive platter.
