Ingredients

  • 4 medium beets, peeled and chopped into bite-sized pieces
  • 3 medium turnips, peeled and chopped into bite-sized pieces
  • 3 tbsp olive oil
  • 2 tsp fresh rosemary, chopped
  • Salt and pepper to taste
  • 3 tbsp balsamic vinegar
  • 2 tbsp raw honey

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Peel and chop the beets and turnips into bite-sized pieces. Place them in a mixing bowl.
  3. Drizzle olive oil over the vegetables. Sprinkle with salt, pepper, and fresh rosemary. Toss until evenly coated.
  4. Spread the seasoned vegetables evenly on the prepared baking sheet. Roast for about 30-35 minutes or until tender and caramelized.
  5. While roasting, combine balsamic vinegar and honey in a small saucepan over medium heat. Stir until well combined and simmer for about five minutes until slightly thickened.
  6. Once roasted, remove the vegetables from the oven and drizzle with glaze. Toss gently to combine before serving on a festive platter.
