- 6 cups Mixed Salad Greens (Spinach, Arugula, or Baby Greens)
- 2 cups Pomegranate Seeds
- 2 Avocados, diced
- 1–2 Apples or Pears, thinly sliced
- 1 cup Goat Cheese (or Feta, Blue Cheese), crumbled
- 1 1/2 cups Walnuts, raw
- 1/2 cup Pumpkin Seeds
- 1/4 cup Balsamic Vinegar (or Apple Cider Vinegar)
- 2 tbsp Honey
- 2 tsp Dijon Mustard
- 2 tbsp Fresh Orange Juice
- 1 tbsp Fig Jam
- 2 tsp Orange Zest
- 1/3 cup Olive Oil
- 1/4 tsp Chili Flakes
- 1/4 tsp Chipotle Powder
- Flaky Salt, to taste
- Freshly Ground Black Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Toss the walnuts and pumpkin seeds with honey, chili powder, and salt until evenly coated. Spread the mixture on the prepared baking sheet and bake for 15 minutes, stirring once. Remove and cool.
- In a large salad bowl, combine the salad greens, apples or pears, pomegranate seeds, and diced avocados.
- Top the salad with the cooled candied walnuts, pumpkin seeds, and crumbled goat cheese.
- For the dressing, mix balsamic vinegar, honey, Dijon mustard, orange juice, fig jam, and orange zest in a jar. Add olive oil, shake until combined, and season with salt and pepper to taste.
- Drizzle the dressing over the salad just before serving and toss gently to coat evenly.
