A festive red velvet cheesecake with a delicious Oreo crust, perfect for Christmas celebrations.

- 24 Oreo cookies (crushed)
- 4 tbsp unsalted butter (melted)
- 16 oz cream cheese (softened)
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp white vinegar
- 1 tbsp cocoa powder
- ½ tsp salt
- 2 tbsp red food coloring
- ½ cup heavy cream (whipped)
- Mini Oreo crumbs or white chocolate curls for topping
Instructions
- Preheat oven to 325°F (163°C).
- Combine crushed Oreos and melted butter; press into the bottom of a 9-inch springform pan.
- Bake 8–10 minutes, then cool slightly.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then vanilla, vinegar, cocoa, salt, and red food coloring. Mix until fully combined.
- Pour over cooled crust and smooth the top.
- Bake at 325°F for 50 minutes, or until the edges are set and the center slightly jiggles.
- Turn off oven, crack the door, and let cheesecake cool inside 30 minutes.
- Refrigerate at least 4 hours or overnight.
- Top with whipped cream, Oreo crumbs, or white chocolate curls before slicing.

- Ensure cream cheese is softened for easier mixing.
- Use gel food coloring for a more vibrant color.
- Let the cheesecake cool completely before refrigerating.
