- 4 large egg whites
- 1 cup superfine sugar
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1/4 teaspoon peppermint extract (optional)
- Red gel food coloring (optional)
- Festive sprinkles (optional)
Instructions
- Preheat the oven to 200°F (93°C) and line two baking sheets with parchment paper.
- In a clean bowl, beat the egg whites on medium speed until foamy.
- Add cream of tartar and continue to beat until soft peaks form.
- Gradually add superfine sugar, 1 tablespoon at a time, beating until glossy stiff peaks form.
- Beat in vanilla and optional peppermint extract.
- For a festive look, paint red gel food coloring inside a piping bag before filling it with the meringue.
- Pipe small swirls onto the parchment paper and top with sprinkles.
- Bake for 1.5 hours, then turn off the oven and let meringues sit inside for another hour.
- Remove once crisp and allow to cool fully before storing.
