Description

These Christmas Light Cupcakes are a festive holiday treat. They feature moist devil’s food chocolate cupcakes topped with fluffy cream cheese frosting and decorated to look like colorful string lights.


Ingredients

  • 1 box devil’s food cake mix (plus ingredients called for on box)
  • 1 1/2 cups heavy cream
  • 1 (8 oz) block cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt
  • Black decorating gel
  • Mini M&Ms (for decoration)

Instructions

  1. Preheat oven to 350°F and line two muffin tins with cupcake liners.
  2. Prepare devil’s food cake batter according to package instructions. Fill liners 3/4 full and bake for about 18 minutes, or until a toothpick comes out clean. Let cool completely.
  3. In a large bowl, beat heavy cream until stiff peaks form. Set aside.
  4. In another bowl, beat cream cheese, sugar, vanilla, and salt until light and fluffy. Gently fold in the whipped cream to make the frosting.
  5. Transfer frosting to a piping bag or large zip-top bag and pipe onto cooled cupcakes.
  6. Use black decorating gel to draw a swirl around the frosting.
  7. Press mini M&Ms along the black gel to resemble Christmas lights.
