Ingredients

  • 200g mixed dried fruits
  • 100g unsalted butter
  • 150g sugar
  • 2 large eggs
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 100ml milk
  • 50g chopped nuts (optional)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, mix the dried fruits with a little flour to prevent them from sinking.
  3. Cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Sift together the flour, baking powder, cinnamon, and nutmeg, then fold into the mixture.
  6. Add the milk and mix until smooth.
  7. Fold in the floured dried fruits and nuts if using.
  8. Pour the batter into a greased cake tin and smooth the top.
  9. Bake for 45-50 minutes or until a skewer comes out clean.
  10. Let it cool in the tin for 10 minutes before transferring to a wire rack.
