Ingredients

- 200g mixed dried fruits
- 100g unsalted butter
- 150g sugar
- 2 large eggs
- 200g all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp nutmeg
- 100ml milk
- 50g chopped nuts (optional)
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, mix the dried fruits with a little flour to prevent them from sinking.
- Cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Sift together the flour, baking powder, cinnamon, and nutmeg, then fold into the mixture.
- Add the milk and mix until smooth.
- Fold in the floured dried fruits and nuts if using.
- Pour the batter into a greased cake tin and smooth the top.
- Bake for 45-50 minutes or until a skewer comes out clean.
- Let it cool in the tin for 10 minutes before transferring to a wire rack.
