Description
A fresh, hearty antipasto salad loaded with crisp romaine, savory Italian meats, creamy cheeses, and briny veggies, all tossed in a simple homemade balsamic vinaigrette.

- ¼ cup balsamic vinegar
- 2 tablespoons dijon mustard
- 1 garlic clove, grated
- 1 teaspoon honey
- 1 teaspoon dried italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ cup olive oil
- 2 hearts of romaine, washed and chopped
- ½ cup pepperoni, diced
- ½ cup salami, diced
- ½ cup provolone, diced
- ½ cup mozzarella pearls
- ¼ cup kalamata olives, sliced
- ¼ cup red onion, thinly sliced
- ¼ cup sliced pepperoncini peppers
- ¼ cup marinated artichoke hearts
- For Garnish: grated parmesan and torn fresh basil
Instructions
- Add the balsamic vinegar, Dijon mustard, garlic, honey, Italian seasoning, salt, and pepper to a small bowl. Whisk until well combined.
- While whisking, slowly drizzle in the olive oil until the dressing is smooth and emulsified. Refrigerate until ready to use.
- Add the lettuce to a large serving bowl and drizzle with about half of the dressing. Toss gently to coat.
- Top with the remaining ingredients, then drizzle over the rest of the dressing. Toss once more and serve right away.
