Description

A fresh, hearty antipasto salad loaded with crisp romaine, savory Italian meats, creamy cheeses, and briny veggies, all tossed in a simple homemade balsamic vinaigrette.


Ingredients

  • ¼ cup balsamic vinegar
  • 2 tablespoons dijon mustard
  • 1 garlic clove, grated
  • 1 teaspoon honey
  • 1 teaspoon dried italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup olive oil
  • 2 hearts of romaine, washed and chopped
  • ½ cup pepperoni, diced
  • ½ cup salami, diced
  • ½ cup provolone, diced
  • ½ cup mozzarella pearls
  • ¼ cup kalamata olives, sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup sliced pepperoncini peppers
  • ¼ cup marinated artichoke hearts
  • For Garnish: grated parmesan and torn fresh basil

Instructions

  1. Add the balsamic vinegar, Dijon mustard, garlic, honey, Italian seasoning, salt, and pepper to a small bowl. Whisk until well combined.
  2. While whisking, slowly drizzle in the olive oil until the dressing is smooth and emulsified. Refrigerate until ready to use.
  3. Add the lettuce to a large serving bowl and drizzle with about half of the dressing. Toss gently to coat.
  4. Top with the remaining ingredients, then drizzle over the rest of the dressing. Toss once more and serve right away.
