Delicious and moist chocolate zucchini muffins that are perfect for breakfast or a snack.
Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups grated zucchini
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a bowl, mix flour, cocoa powder, baking soda, and salt.
- In another bowl, whisk sugar, oil, egg, and vanilla until smooth.
- Stir in grated zucchini.
- Fold dry ingredients into the wet mixture until just combined.
- Add chocolate chips and mix lightly.
- Spoon batter into muffin cups, filling each 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before transferring to a wire rack.
