- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 cup melted dark chocolate
- 1 cup fresh strawberries, pureed
- ¼ cup granulated sugar (for strawberry swirl)
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 350°F (175°C).
- Mix cookie crumbs, melted butter, and sugar in a bowl; press into the bottom of a springform pan.
- Bake crust for 10 minutes; cool completely.
- Beat cream cheese until smooth; gradually add sugar and eggs, mixing well after each addition. Stir in sour cream and melted chocolate.
- In another bowl, mix strawberry puree with sugar and lemon juice until smooth.
- Pour chocolate filling over the crust; dollop strawberry puree on top and swirl gently.
- Bake for 50-60 minutes until edges are set but center jiggles slightly.
- Allow to cool in the oven with the door ajar for an hour, then refrigerate for at least four hours before serving.
