- 8 oz dark chocolate, finely chopped
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter, softened
- 2 tablespoons raspberry puree (strained)
- 1 teaspoon vanilla extract
- Pinch of salt
- Unsweetened cocoa powder
- Finely chopped dark chocolate
- Freeze-dried raspberries, crushed
Instructions
- Blend raspberries until smooth, strain to remove seeds, and measure 2 tablespoons of puree.
- Place chopped dark chocolate in a heatproof bowl.
- Heat heavy cream until just simmering, then pour over chocolate. Let sit 1 minute.
- Whisk until smooth, then stir in butter, raspberry puree, vanilla, and salt.
- Cover and refrigerate for 1–2 hours until firm enough to scoop.
- Scoop and roll ganache into balls, working quickly.
- Roll truffles in cocoa powder, chopped chocolate, or crushed raspberries.
- Chill finished truffles for 30 minutes before serving.
