  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1/3 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (semi-sweet or dark)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cocoa powder, and espresso powder.
  3. In a large bowl, mash the ripe bananas. Stir in the granulated sugar, brown sugar, and vegetable oil. Beat in the eggs one at a time, then add the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Gently fold in the chocolate chips and nuts, if using.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
