- 2 packages (3.4 oz each) instant vanilla pudding mix
- 1 container (8 oz) whipped topping, thawed
- 1 box graham crackers (about 18 full sheets)
- 1 cup semi-sweet chocolate chips
- 0.5 cup heavy cream
- 2 tablespoons corn syrup (optional)
- 1 pinch salt
Instructions
- In a large mixing bowl, whisk together pudding mix and cold milk for 2 minutes until thickened. Let it sit for another 1–2 minutes.
- Fold in the whipped topping gently until the filling is smooth and fluffy.
- In a 9×13 inch dish, place a single layer of graham crackers, breaking pieces to fit fully.
- Spread half of the pudding mixture evenly over the crackers.
- Add another layer of graham crackers on top of the pudding.
- Spread the remaining pudding mixture over that second cracker layer.
- Finish with one last layer of graham crackers on top.
- For the ganache: heat heavy cream until simmering, then pour over chocolate chips. Let sit 2 minutes, then stir until smooth. Add corn syrup and salt if desired.
- Spread the ganache evenly over the final graham cracker layer.
- Cover the dish and refrigerate for at least 6 hours, or preferably overnight.
- Slice and serve cold.
