- 1/3 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup shredded sweetened coconut
- 1/2 cup chopped almonds
- 1/2 cup semi-sweet chocolate chips
Instructions
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a separate large bowl, cream the softened butter with brown and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and beat until smooth.
- Gradually add dry ingredients to the wet mixture and stir until just combined.
- Fold in coconut, chopped almonds, and chocolate chips.
- Cover and chill the dough in the fridge for 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop dough into balls and place on the sheet, spaced apart.
- Bake for 10–12 minutes, until edges are set but centers remain soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
