- 1½ cups unsalted butter
- 1½ cups packed light brown sugar
- 1 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 Tbsp vanilla extract
- 2 Tbsp hot water
- 2 cups all-purpose flour
- 1 cup cake flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1½ tsp salt
- 1 tsp baking soda
- 1 cup white chocolate chips
- 1 cup semi-sweet chocolate chips
- 1 cup chopped pecans
Instructions
- Melt the unsalted butter in the microwave, then pour it into a large mixing bowl fitted to an electric stand mixer. Allow the butter to cool slightly.
- Add the light brown sugar and granulated sugar to the melted butter and mix on medium speed for 4 minutes.
- Scrape down the sides of the bowl. Add the whole egg and egg yolk one at a time, mixing well after each addition.
- In a small bowl, mix together the baking soda and hot water until dissolved. Add this mixture along with the vanilla extract to the dough and mix thoroughly.
- In a separate bowl, whisk together the all-purpose flour, cake flour, baking powder, cinnamon, and salt.
- Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined.
- Fold in the white chocolate chips, semi-sweet chocolate chips, and chopped pecans.
- Using a medium cookie scoop, portion the dough onto a baking sheet lined with parchment paper. Cover the dough and refrigerate for at least 3 hours.
- Preheat your oven to 350°F (175°C).
- Remove dough from the refrigerator and place cookie dough balls spaced about 2 inches apart on baking sheets.
- Bake for 10-12 minutes or until the edges are lightly golden.
