Description

Ingredients

  • 1½ cups packed light brown sugar
  • 1 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 Tbsp vanilla extract
  • 2 Tbsp hot water
  • 2 cups all-purpose flour
  • 1 cup cake flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1½ tsp salt
  • 1 tsp baking soda
  • 1 cup white chocolate chips
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans

Instructions

  1. Melt the unsalted butter in the microwave, then pour it into a large mixing bowl fitted to an electric stand mixer. Allow the butter to cool slightly.
  2. Add the light brown sugar and granulated sugar to the melted butter and mix on medium speed for 4 minutes.
  3. Scrape down the sides of the bowl. Add the whole egg and egg yolk one at a time, mixing well after each addition.
  4. In a small bowl, mix together the baking soda and hot water until dissolved. Add this mixture along with the vanilla extract to the dough and mix thoroughly.
  5. In a separate bowl, whisk together the all-purpose flour, cake flour, baking powder, cinnamon, and salt.
  6. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined.
  7. Fold in the white chocolate chips, semi-sweet chocolate chips, and chopped pecans.
  8. Using a medium cookie scoop, portion the dough onto a baking sheet lined with parchment paper. Cover the dough and refrigerate for at least 3 hours.
  9. Preheat your oven to 350°F (175°C).
  10. Remove dough from the refrigerator and place cookie dough balls spaced about 2 inches apart on baking sheets.
  11. Bake for 10-12 minutes or until the edges are lightly golden.
