Ingredients

- 2 ripe mangoes (peeled and chopped)
- 1 cup cucumber (chopped)
- 1/2 red bell pepper (chopped)
- 1/4 red onion (chopped)
- 1 clove garlic
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tbsp vinegar (apple cider or white)
- Salt to taste
- Black pepper to taste
- 1/2 cup cold water (adjust as needed)
- Optional: fresh herbs (cilantro or parsley)
- Optional: diced avocado
Instructions
- Peel and chop mangoes into small pieces.
- Chop cucumber, bell pepper, and onion evenly.
- Add mango, vegetables, garlic, olive oil, lime juice, vinegar, salt, and pepper to a blender.
- Blend until smooth.
- Add cold water gradually to reach desired consistency.
- Taste and adjust seasoning if needed.
- Transfer to a container and refrigerate for 1–2 hours.
- Stir well before serving.
- Garnish with herbs, avocado, or extra vegetables if desired.
- Serve chilled.
