Description
Chili Con Carne Enchiladas combine seasoned ground beef with a rich, flavorful chili sauce, wrapped in soft flour tortillas and topped with melted cheddar cheese.

- 1 pound lean ground beef
- 1/2 cup chopped white onion
- 2 tablespoons chili powder
- 1 tablespoon paprika
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 (8 ounce) can tomato sauce
- 1/2 teaspoon kosher salt
- 1/4 cup all-purpose flour
- 1 and 1/2 cups beef broth
- 8 (8 inch) soft flour tortillas
- 3 cups freshly shredded cheddar cheese, divided
- Chopped white onion
- Chopped fresh cilantro
Instructions
- Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with non-stick cooking spray.
- In a large skillet over medium heat, cook the ground beef until browned and most grease has evaporated.
- Add chili powder, paprika, cumin, garlic powder, and kosher salt to the beef. Stir in tomato sauce and simmer.
- In a bowl, whisk flour and beef broth until smooth. Add to the meat sauce and cook until thickened.
- Place 1/4 cup of shredded cheddar cheese inside each tortilla. Roll them up tightly and arrange seam side down in the baking dish.
- Pour the thickened meat sauce over the tortillas. Sprinkle remaining cheese on top.
- Bake for 25 minutes until bubbly and cheese is melted.
- Remove from oven and garnish with chopped onion and cilantro. Serve hot.
