- 2 cups cooked chickpeas
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons paprika
- 1 can (14.5 ounces) diced tomatoes, with their juices
- 1 cup vegetable broth
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Heat 2 tablespoons of olive oil in a large pan over medium heat.
- Add the chopped onion and sauté for 5-7 minutes until translucent and soft.
- Stir in 2 minced garlic cloves and 2 tablespoons of paprika. Cook for 1 minute until fragrant.
- Add 1 can of diced tomatoes with their juices and 1 cup of vegetable broth. Bring to a gentle simmer.
- Add 2 cups of cooked chickpeas. Stir everything together and let it cook for another 10 minutes.
- Taste and season with salt and black pepper as needed.
- Serve hot.
