- 1 ripe avocado, diced
- 1/2 cup crumbled feta cheese
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely diced
- 1/4 cup cucumber, diced
- 2 tbsp fresh parsley or cilantro, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional: 1/2 tsp cumin or smoked paprika for extra flavor
Instructions
- In a large bowl, combine chickpeas, avocado, cherry tomatoes, red onion, cucumber, and feta.
- In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and optional spices.
- Pour dressing over salad and gently toss to combine, being careful not to mash the avocado.
- Garnish with fresh parsley or cilantro and serve immediately.
- Optional: Chill for 15–20 minutes to let flavors meld.
