- 2 packs instant ramen noodles (seasoning packets discarded)
- 1 pound boneless chicken thighs or breasts, chopped
- 1 red bell pepper, thinly sliced
- 1 medium carrot, julienned
- 3 green onions, chopped
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 teaspoon sesame oil
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
- 1 teaspoon cornstarch
- 1/4 cup water
Instructions
- Cook the ramen noodles according to package instructions, but drain 1 minute early. Set aside.
- In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, brown sugar, water, and cornstarch. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken and stir-fry until golden brown and fully cooked, about 5–7 minutes.
- Add garlic, bell peppers, and carrots. Stir-fry for 2–3 minutes until just tender.
- Add cooked noodles and the prepared sauce. Toss everything together until noodles are evenly coated and sauce thickens.
- Sprinkle with green onions and serve hot.
