  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 2 medium potatoes, cubed
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon fresh thyme
  • ½ cup bread crumbs

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Heat olive oil in a skillet over medium heat. Sear chicken thighs until golden brown on both sides. Remove chicken from skillet and set aside.
  3. Add chopped onion, minced garlic, sliced carrots, and sliced celery to the same skillet. Sauté until vegetables soften.
  4. Stir in cubed potatoes. Season with salt, pepper, and fresh thyme.
  5. Pour in chicken broth and bring to a simmer. Cook for a few minutes.
  6. Mix in heavy cream to create a creamy sauce.
  7. Transfer the vegetable and sauce mixture into a baking dish. Spread evenly.
  8. Place the seared chicken thighs on top of the vegetable mixture.
  9. Sprinkle shredded cheese over the chicken and vegetables.
  10. Top with bread crumbs and bake uncovered for 35 minutes, or until golden and bubbling.
