  • 3 tablespoons olive oil
  • 1/2 teaspoon ground chili
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 1/2 tablespoons freshly squeezed lime juice
  • Soft or hard taco shells
  • Fresh cilantro leaves
  • Chopped brown or red onion
  • Lime wedges
  • Sour cream (optional)

Instructions

  1. In a large bowl, combine chicken, 1 tablespoon olive oil, chili, cumin, paprika, cayenne pepper, and lime juice. Toss to coat and marinate for at least 1 hour (3–6 hours preferred).
  2. Heat a skillet over medium-high heat with remaining 2 tablespoons olive oil.
  3. Add chicken and cook about 6 minutes per side, or until internal temperature reaches 165°F.
  4. Let chicken rest, then dice into small cubes.
  5. Warm taco shells. Fill with chicken and top with chopped onion, fresh cilantro, a squeeze of lime, and sour cream if desired.
