- 1 1/2 pounds boneless, skinless chicken breast or thighs
- 3 tablespoons olive oil
- 1/2 teaspoon ground chili
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 1/2 tablespoons freshly squeezed lime juice
- Soft or hard taco shells
- Fresh cilantro leaves
- Chopped brown or red onion
- Lime wedges
- Sour cream (optional)
Instructions
- In a large bowl, combine chicken, 1 tablespoon olive oil, chili, cumin, paprika, cayenne pepper, and lime juice. Toss to coat and marinate for at least 1 hour (3–6 hours preferred).
- Heat a skillet over medium-high heat with remaining 2 tablespoons olive oil.
- Add chicken and cook about 6 minutes per side, or until internal temperature reaches 165°F.
- Let chicken rest, then dice into small cubes.
- Warm taco shells. Fill with chicken and top with chopped onion, fresh cilantro, a squeeze of lime, and sour cream if desired.
