A delicious and creamy chicken dish with spinach and mushrooms.
Ingredients

- 1 lb boneless, skinless chicken breasts (or thighs)
- 2 cups fresh spinach (washed and chopped)
- 1 cup mushrooms (sliced, any variety you prefer)
- 2 cloves garlic (minced)
- 1 medium onion (chopped)
- 1/2 cup chicken broth (or white wine)
- 1/2 cup heavy cream (or half-and-half for a lighter option)
- 2 tablespoons olive oil
- 1 teaspoon dried thyme (or fresh thyme)
- Salt and pepper to taste
- Grated Parmesan cheese (optional, for serving)
Instructions
- Season the chicken breasts with salt, pepper, and dried thyme on both sides.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken to the skillet and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice golden brown color. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent.
- Add the sliced mushrooms to the skillet and cook for another 5 minutes, until they are softened and browned.
- Stir in the chopped spinach and cook until wilted, about 2 minutes.
- Pour in the chicken broth (or white wine) and let it simmer for 2-3 minutes. Then, add the heavy cream and stir to combine. Let the sauce simmer for a few minutes until slightly thickened.
- Add the cooked chicken back to the skillet, spooning some of the sauce over the top. Cook for another 2-3 minutes to heat through.
- Serve hot, garnished with grated Parmesan cheese if desired. This dish pairs wonderfully with rice, pasta, or a side salad.
