Flavorful Chicken Shawarma Wraps

- 1 1/2 pounds boneless, skinless chicken thighs
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander

- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 4 large pita breads or flatbreads
- 1 cup lettuce, shredded
- 1 medium tomato, diced
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup tahini sauce or garlic sauce
- Fresh parsley or cilantro for garnish (optional)
Instructions
- Prepare the Marinade: In a large bowl, whisk together the olive oil, lemon juice, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper (if using), salt, and pepper.
- Add Chicken: Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.
- Preheat the Grill or Skillet: Heat a grill or large skillet over medium-high heat.
- Cook the Chicken: Remove the chicken from the marinade and cook for about 5-7 minutes per side, or until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F (75°C).
- Rest and Slice: Once cooked, remove the chicken from the heat and let it rest for a few minutes before slicing it into thin strips.
- Prepare the Pita: Warm the pita breads or flatbreads in a dry skillet or microwave for a few seconds to make them pliable.
- Layer the Ingredients: On each pita, layer the shredded lettuce, diced tomato, cucumber, and sliced red onion. Add a generous portion of the sliced chicken on top.
- Add Sauce: Drizzle tahini sauce or garlic sauce over the chicken and vegetables. Garnish with fresh parsley or cilantro if desired.
- Wrap the Pita: Fold the sides of the pita over the filling and roll it up tightly from the bottom to secure all the ingredients inside.
- Serve: Cut the wraps in half and serve immediately with extra sauce on the side for dipping.

- Chicken Thighs: Chicken breasts can be used for a leaner option.
- Tahini Sauce: Yogurt or tzatziki can be used as an alternative sauce.
