  • 4 large pita breads or flatbreads
  • 1 cup lettuce, shredded
  • 1 medium tomato, diced
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup tahini sauce or garlic sauce
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together the olive oil, lemon juice, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper (if using), salt, and pepper.
  2. Add Chicken: Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.
  3. Preheat the Grill or Skillet: Heat a grill or large skillet over medium-high heat.
  4. Cook the Chicken: Remove the chicken from the marinade and cook for about 5-7 minutes per side, or until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F (75°C).
  5. Rest and Slice: Once cooked, remove the chicken from the heat and let it rest for a few minutes before slicing it into thin strips.
  6. Prepare the Pita: Warm the pita breads or flatbreads in a dry skillet or microwave for a few seconds to make them pliable.
  7. Layer the Ingredients: On each pita, layer the shredded lettuce, diced tomato, cucumber, and sliced red onion. Add a generous portion of the sliced chicken on top.
  8. Add Sauce: Drizzle tahini sauce or garlic sauce over the chicken and vegetables. Garnish with fresh parsley or cilantro if desired.
  9. Wrap the Pita: Fold the sides of the pita over the filling and roll it up tightly from the bottom to secure all the ingredients inside.
  10. Serve: Cut the wraps in half and serve immediately with extra sauce on the side for dipping.
