  • 1 cup carrots (diced)
  • 1 cup frozen peas
  • 1 cup celery (chopped)
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tsp poultry seasoning
  • 1 pie crust (store-bought or homemade)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. Season chicken breasts with salt and pepper. Cook in a skillet over medium heat until golden brown, about 5 minutes per side. Let cool and shred.
  3. In the same skillet, sauté garlic, carrots, celery, and frozen peas in olive oil until softened, about 5 minutes.
  4. Whisk together chicken broth, heavy cream, and poultry seasoning in a bowl. Pour over sautéed veggies and stir.
