- 3 cups boneless, skinless chicken breasts (cooked and shredded)
- 1 cup fresh garlic (minced)
- 1 cup carrots (diced)
- 1 cup frozen peas
- 1 cup celery (chopped)
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 2 tsp poultry seasoning
- 1 pie crust (store-bought or homemade)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and grease a baking dish.
- Season chicken breasts with salt and pepper. Cook in a skillet over medium heat until golden brown, about 5 minutes per side. Let cool and shred.
- In the same skillet, sauté garlic, carrots, celery, and frozen peas in olive oil until softened, about 5 minutes.
- Whisk together chicken broth, heavy cream, and poultry seasoning in a bowl. Pour over sautéed veggies and stir.
- Spread shredded chicken in the baking dish. Pour sauce mixture over the top.
- Roll out pie crust and place over filling; seal edges well.
- Bake for 30-35 minutes until golden brown.
