  • 1 cup Fresh Pineapple
  • 1 medium Red Capsicum (Bell Pepper)
  • 1 cup Fruit Chutney
  • 3 tablespoons Soy Sauce
  • 2 cloves Garlic Cloves
  • 1 tablespoon Ginger
  • 2 tablespoons Sesame Oil
  • 2 tablespoons Vegetable Oil

Instructions

  1. In a bowl, mix the fruit chutney, soy sauce, minced garlic, minced ginger, sesame oil, and vegetable oil. Reserve half of this mixture. Coat the chicken in the remaining marinade and refrigerate for at least 30 minutes, or up to 2 days for extra flavor.
  2. Take skewers and thread on one piece of marinated chicken, followed by a chunk of fresh pineapple and a piece of red capsicum. Repeat until the skewer is filled.
  3. Preheat the BBQ or char-grill plate to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is fully cooked.
  4. Brush the skewers with the reserved marinade in the last 1-2 minutes of cooking for extra flavor.
