  • 2 large boneless, skinless chicken breasts, pounded to even thickness
  • ½ cup (60g) all-purpose flour (can substitute with gluten-free flour blend)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 fresh lemons, juiced and zested
  • ¾ cup (180 ml) low sodium chicken broth
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound to about ½-inch (1.25 cm) thickness to ensure even cooking (about 5 minutes).
  2. Season both sides of the chicken breasts generously with salt and pepper. Pour the flour onto a shallow plate and lightly dredge each piece, shaking off excess.
  3. Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a skillet over medium-high heat. When the butter foams, add the chicken breasts. Cook for about 3-4 minutes per side until golden brown and cooked through (internal temperature around 165°F/74°C). Transfer to a warm plate and tent with foil.
  4. Lower the heat to medium and add the minced garlic to the pan. Sauté for about 30 seconds until fragrant but not browned.
  5. Pour in the chicken broth, lemon juice, and zest, scraping the bottom to loosen browned bits. Stir in the capers.
  6. Let the sauce simmer gently for about 3-5 minutes until it reduces slightly. Stir in the remaining 2 tablespoons of butter, whisking to create a silky, rich sauce. Taste and adjust seasoning with salt and pepper if needed.
  7. Return the chicken to the pan, spooning some sauce over each breast. Let it warm through for 1-2 minutes.
  8. Sprinkle with fresh parsley before serving.
