- 2 large boneless, skinless chicken breasts, pounded to even thickness
- ½ cup (60g) all-purpose flour (can substitute with gluten-free flour blend)
- Salt and pepper, to taste
- 2 tablespoons olive oil (extra virgin preferred)
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- 2 fresh lemons, juiced and zested
- ¾ cup (180 ml) low sodium chicken broth
- 2 tablespoons capers, drained
- 2 tablespoons fresh parsley, chopped
Instructions
- Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound to about ½-inch (1.25 cm) thickness to ensure even cooking (about 5 minutes).
- Season both sides of the chicken breasts generously with salt and pepper. Pour the flour onto a shallow plate and lightly dredge each piece, shaking off excess.
- Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a skillet over medium-high heat. When the butter foams, add the chicken breasts. Cook for about 3-4 minutes per side until golden brown and cooked through (internal temperature around 165°F/74°C). Transfer to a warm plate and tent with foil.
- Lower the heat to medium and add the minced garlic to the pan. Sauté for about 30 seconds until fragrant but not browned.
- Pour in the chicken broth, lemon juice, and zest, scraping the bottom to loosen browned bits. Stir in the capers.
- Let the sauce simmer gently for about 3-5 minutes until it reduces slightly. Stir in the remaining 2 tablespoons of butter, whisking to create a silky, rich sauce. Taste and adjust seasoning with salt and pepper if needed.
- Return the chicken to the pan, spooning some sauce over each breast. Let it warm through for 1-2 minutes.
- Sprinkle with fresh parsley before serving.
