- 1 medium onion, sliced

- 1 medium red bell pepper, sliced
- 1 tablespoon butter
- 4 hoagie rolls or sub rolls
- 8 ounces provolone cheese or cheese of your choice

Instructions
- Season the Chicken: In a bowl, combine the sliced chicken with olive oil, garlic powder, onion powder, salt, and pepper. Mix well.
- Heat the Pan: In a large skillet over medium-high heat, add a tablespoon of olive oil. Once hot, add the seasoned chicken slices.
- Sauté the Chicken: Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through. Remove from the skillet.
- Cook the Onions and Peppers: In the same skillet, add the butter. Once melted, add the sliced onions and bell peppers. Sauté for 5-7 minutes.
- Mix Together: Return the cooked chicken to the skillet with the sautéed vegetables. Stir to combine and heat through for another 2-3 minutes.
- Prepare the Rolls: Slice the hoagie rolls lengthwise, being careful not to cut all the way through.
- Add the Filling: Fill each roll with the chicken and vegetable mixture. Top with slices of provolone cheese.
- Toast (Optional): Place the filled sandwiches under a broiler for 1-2 minutes until the cheese is bubbly.
- Garnish and Enjoy: Serve hot with optional toppings like mayonnaise, hot sauce, or pickles.
