Ingredients

  • 1 cup cooked chicken breast, chopped or shredded
  • ½ cup pesto sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • ½ cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • 1 tablespoon olive oil
  • ¼ teaspoon sea salt
  • Fresh basil leaves, for garnish
  • Optional: red pepper flakes, arugula, or balsamic glaze

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly oil it.
  2. Place flatbreads on baking sheet and spread each with pesto, leaving a small border.
  3. Top with cooked chicken, mozzarella, cherry tomatoes, and red onion. Drizzle with olive oil and sprinkle with sea salt.
