- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup Italian-style breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1 1/2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 2 tablespoons chopped fresh basil (optional)
Instructions
- Slice chicken breasts in half horizontally to create thin cutlets and pound to even thickness if needed. Season with salt and pepper.
- Set up three bowls: one with flour, one with beaten eggs, and one with a mix of breadcrumbs and Parmesan. Dredge chicken in flour, then egg, then breadcrumb mixture, pressing to adhere.
- Heat olive oil in a skillet over medium heat. Fry each cutlet for 3 to 4 minutes per side until golden and cooked through. Transfer to a paper towel-lined plate.
- Preheat oven to 425°F (220°C). Spread a layer of marinara in a baking dish. Add chicken, spoon more sauce on top, and cover with mozzarella.
- Bake uncovered for 15 minutes until the cheese is melted and bubbly. Garnish with fresh basil and serve hot.
