- 1 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 3/4 cup milk
- 2 tbsp melted butter
- 2 boneless chicken breasts, pounded thin
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- Salt and pepper to taste
- 1 cup marinara sauce
- 4 slices mozzarella cheese
- 1 cup arugula
- Spicy mayo (mix 1/4 cup mayo with 1 tbsp sriracha or hot sauce)
Instructions
- Make the waffles: Mix flour, Parmesan, Italian seasoning, baking powder, and salt. Add egg, milk, and melted butter. Cook in a preheated waffle maker until golden and crispy. Set aside.
- Prepare the chicken: Dip chicken in egg, then coat in a breadcrumb and Parmesan mixture. Pan-fry or air-fry until crispy and cooked through.
- Assemble: Warm marinara and spoon over chicken. Top with mozzarella and melt under the broiler or in a hot pan.
- Build the sandwich: Place one waffle on the plate, add the chicken parm, top with arugula and a drizzle of spicy mayo, then close with another waffle.
- Serve immediately while hot and crispy.
