These easy Chicken Enchiladas are a must-try comfort food dinner recipe.

- 2 cups cooked and shredded chicken
- 1 can red enchilada sauce
- 2 cups shredded Monterey Jack cheese
- 8 flour tortillas
- 1 tablespoon vegetable oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Chopped cilantro (for garnish)
- Sour cream (for serving)
Instructions
- Preheat oven to 375°F (190°C).
- Heat vegetable oil in a skillet over medium heat. Sauté chopped onion and garlic until softened.
- Add shredded chicken, cumin, chili powder, salt, and pepper. Stir to combine and heat through.
- Pour a small amount of enchilada sauce into the bottom of a baking dish.
- Fill each tortilla with chicken mixture and some cheese, roll tightly, and place seam-side down in dish.
- Pour remaining enchilada sauce over the top. Sprinkle with remaining cheese.
- Cover with foil and bake for 20–25 minutes. Remove foil and bake another 5–10 minutes until cheese is bubbly and slightly golden.
- Let rest a few minutes before serving. Garnish with cilantro and serve with sour cream.
