Ingredients

  • 2 cups cooked and shredded chicken
  • 1 can red enchilada sauce
  • 2 cups shredded Monterey Jack cheese
  • 8 flour tortillas
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)
  • Sour cream (for serving)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat vegetable oil in a skillet over medium heat. Sauté chopped onion and garlic until softened.
  3. Add shredded chicken, cumin, chili powder, salt, and pepper. Stir to combine and heat through.
  4. Pour a small amount of enchilada sauce into the bottom of a baking dish.
  5. Fill each tortilla with chicken mixture and some cheese, roll tightly, and place seam-side down in dish.
  6. Pour remaining enchilada sauce over the top. Sprinkle with remaining cheese.
  7. Cover with foil and bake for 20–25 minutes. Remove foil and bake another 5–10 minutes until cheese is bubbly and slightly golden.
  8. Let rest a few minutes before serving. Garnish with cilantro and serve with sour cream.
