Description

Chicken Chukka is a dry South Indian chicken dish known for its bold spices, caramelized onions, and rich flavor.


Ingredients

  • 500 g chicken, cleaned and cut into bite-sized pieces
  • 2 large onions, thinly sliced
  • 2 tsp ginger‑garlic paste
  • 2 tsp red chili powder (adjust to taste)
  • ¼ tsp turmeric powder
  • ½ tsp coriander powder
  • ½ tsp crushed black pepper
  • ¼ tsp garam masala powder
  • 2 tbsp coconut oil (plus extra for frying)
  • Fresh curry leaves
  • Salt to taste

Instructions

  1. Heat coconut oil in a deep pan over medium heat. Add sliced onions and fry until golden brown and crisp. Set aside.
  2. In a bowl, marinate chicken with fried onions, ginger‑garlic paste, red chili powder, turmeric, coriander, black pepper, garam masala, and salt. Rest for at least 20 minutes.
  3. Add marinated chicken to a heavy pan over medium heat. Stir occasionally as chicken cooks and releases moisture.
  4. Cook until chicken is tender and masala thickens to a semi‑dry finish.
  5. Add curry leaves and a drizzle of extra coconut oil. Stir to combine and serve hot.
