- 1 cup old-fashioned oats
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1 large egg
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon baking soda

- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the ripe banana until mostly smooth.
- Add melted butter, brown sugar, egg, and vanilla to the banana. Mix until combined.
- Stir in flour, baking soda, cinnamon, and salt until incorporated.
- Fold in the oats until evenly mixed. Add optional mix-ins like chocolate chips or nuts if desired.
- Scoop heaping tablespoons of dough onto the baking sheet.
- Bake for 10–12 minutes or until edges are golden and centers are just set.
- Let cool for a few minutes before transferring to a wire rack.
